I know Zeppola is more of an Italian fried dough/donut pastry, but I really wanted to play with this recipe. Needs a few days for cheesecake to round out.
Like fluffy fried lemon glaze pastry filled with mellow cheesecake. So good! Vanilla Bean IC is such a fun and versatile vanilla, and really opens up recipes without the peppery bite of other brands.
I am quite proud of this one, and like it as much as my RY Double Ice Cream. I wanted a nice lemon pastry without the use of INW Lemon Cake, and this fits quite nicely.
I have tweaked percentages to increase the Sugar Cookie, and bring down cheesecake, even though the cheesecake was light. After a few days, Lemon Sicily becomes less bright and tart, and really melds with the cookie/dough flavors.
